Rock ‘n’ Roll Rice

I know I’m not alone. There’s a ton of food in your house and yet, “there’s nothing to eat.” Random cans of beans, various containers of broth, maybe there’s pasta sauce, maybe there’s not, half a container or less of sour cream, 2 eggs, and not enough leftovers to make a full serving. Bits and pieces that should add up to something, but don’t.

Never fear, rice is here! Back in college my husband would, from time to time (and usually all the times in between) have something he called Rock ‘n’ Roll Rice. Cook some rice, mix it with whatever is in your fridge, freezer, and/or pantry, and hope for the best. Got lemon juice? Toss it in. Got a couple spoonfuls of Greek yogurt? Plop that in too. Frozen peas? In they go. Don’t forget the 5 lonely remaining banana peppers in that jar you’re not sure how long has been sitting there, or the wilted cilantro hiding in the back of the crisper drawer. And you can’t leave out the leftover Chinese take-out. Nothing is off limits. Pizza might be tough to use, but I suppose if you scrape off the toppings and toss out the bread that’s too stale to be of any use anyway, it could probably work.

Tuesday – Taco night!

Wednesday – Lemon Garlic Tuna Burgers

Thursday – Zucchini Fritters and Stuffed Tomatoes with Couscous and Zucchini ( America’s Test Kitchen: The Complete Vegetarian Cookbook)

Friday – Camping food! Brats and Cider

Saturday – Camping Food! Pancakes and coffee for breakfast, sandwiches for lunch, possibly a trip into town for dinner.
