Tasty Veggie Grilling

Husband and I love to grill on our Weber charcoal grill. We even dig the grill out of the snow in the winter, so when it hit over 50 degrees today, we knew what we’d be doing for dinner. I had found a recipe for portobello burgers I’d been wanting to try for quite some time. Husband also has a fantastic marinade for vegetable skewers. We used the same skewer marinade on sliced potatoes to make potato chips. Since veggies take all of 5 minutes to grill up, we felt guilty about using so many coals so we grilled up some tasty honey mustard chicken to use for future lunches/dinners.

The recipe calls for use of the broiler, but we used the charcoal grill instead (high heat). Also, we didn’t have capers, but I found a place on the internet that suggested olives would be a good substitution. We didn’t have olives either so I used dill pickle relish. I also added about 1/8 tsp ginger and 1/4 tsp chives for fun.

Grilled Veg Marinade

Grilling vegetables has never tasted so good!

Ingredients

  • 1/3 Cup Apple Cider Vinegar
  • 1/4 Cup olive oil
  • 2 tsp black pepper
  • 2 Tbsp crushed, dried parsley
  • 3 cloves garlic
  • 2 Tbsp dried oregano
  • 1/2 tsp dried basil
  • 1 tsp kosher salt

Directions

  1. Mix all ingredients in a gallon-sized zip-lock bag with desired veggies. Let marinade at room temp or in the fridge for 30 minutes.

Grilled Veg Skewers

Ingredients

  • 6 bamboo skewers
  • 1 zucchini, cut in 1/2-inch slices
  • 1 bell pepper, cut in half, then the halves cut in quarters
  • 1 onion, red or yellow, cut in quarters
  • 1 recipe Grilled Veg Marinade (above)
  1. Soak the skewers in water in a shallow dish until the veggies are done marinading.
  2. Add veggies to marinade bag, rotate a couple times to coat the veggies, and let sit for 30 minutes.
  3. Remove the skewers from the water and begin skewering the vegetables, alternating between the zucchini, onion, and bell pepper.
  4. Place the skewers on grill over high heat. Turn every couple of minutes until the veggies are tender, but not mushy.

Grilled Potato Chips

Ingredients

  • 1 recipe Grilled Veg Marinade (above)
  • 3 small russet potatoes, cleaned and sliced very thinly

Directions

  1. Toss the potatoes in the veg marinade and transfer to a grilling platter in a single layer and place on the grill over high heat.
  2. Grill until the potatoes are just crispy, flipping once in a while
